Description
The Santoku is a general-purpose kitchen knife similar to the chef knife, but without as much of a curve to the blade. This results in more of a chopping vs. a rocking motion. Santoku knives excel at slicing, dicing, and mincing.
The Kullenschliff (K) edge, also known as a Granton or Hollow-Edge, helps prevent food sticking to or stacking up onthe blade, by creating air bubbles in the hollow grooves between the food and the blade.
