Made from fermented, overripe bananas on the Casa Stivalet plantation in Veracruz, Mexico, this Vinegar is mildly funky and fruity. Platano machos, a breed of bananas somewhere between a regular banana and a plantain lend a ripe, tropical flavor. Use to dress salads, ceviches, or add a splash to finish cooked dishes.
